BC SERIES ROLL-IN COMBI OVENS

These Combi ovens feature
self-contained, self-flushing steam generators separate from the
cooking compartment for instant steam recovery when switching
cooking modes.

EXCLUSIVE - Semi
Automatic Deliming. This deliming pump mounts directly to your Synergy oven.
When you initiate the deliming process, it automatically
pumps in the correct amount of solution. What could be
easier?

EXCLUSIVE - Deliming
Indicator Light. Your Synergy ovens come standard with
an indicator light which flashes when it is time to delime
the unit. No more guessing. We also supply a large container
fitted with a hand pump. You simply pump solution into the
generator, initiate the process with the flick of a switch,
and the unit takes care of the rest. No more need to call
for service.

EXCLUSIVE - Steam on
Demand. - A simple timer and push button combination
puts you in control of the steam. Just like a commercial
bakery oven, you can inject steam when you decide (with
either Convection or Combi modes) to intensify the cooking
process or add crust to bread.

Vario-Steam® Mode -
produces temperature-controlled steam, which is excellent
for poaching and seafood.

Utilization review - the Synergy
oven automatically records the "on" time of each cooking
mode and the date of each deliming cycle. This gives the
operator and service technicians vital information on how
the oven is being used and how often the steam generator has
been delimed. Data is accessible via RS-232 serial
communication via laptop computer or PDA.

time and temperature dials for easy set up, simple mode
selection switch, steam on demand, vario-steam and deliming

WATER QUALITY INFORMATION
Water quality is a major factor
affecting the function, reliability and life of your combi.
Unseen contaminants can create serious issues with the taste,
odor and appearance of your food, and the performance of your combi.

Steam generator maintenance as well as the use of good quality
feed water are the responsibility of the owner/user. The use of poor
quality feed water will void your warranty. If you are unsure of
water quality, consult a local water treatment specialist and have
the water analyzed. Your water supply must be within these general
guidelines:

Total dissolved solids: Less than 100
PPM
-
Total alkalinity: Less than 80-120 PPM
-
Silica: Less than 13 PPM
-
Chlorides: Less than 30 PPM
-
pH Factor: 7.0 - 8.0
-
Sulfates: Less than 40 PPM
-
Chlorine: 0 PPM
Water which fails to meet these
standards should be treated with professional water treatment. Blodgett, while not a water expert, offers filters purely as a
convenience to you our customers. Our current partners for steam
generator combi ovens are Everpure and Terry. See below for information on
their recommended water filters.
